Foodie Friday: Catalina’s crispy skin barramundi with seafood

This crispy skin Cone Bay barramundi, pipis, vongole, mussels, braised leeks, avruga and lemon thyme volute (quite the mouthful, pardon the pun!) comes from renowned Sydney restaurant Catalina.

Ingredients (one serving)

  • 1 snapper or 1 barramundi carcass (for fish stock)
  • 40g of salted butter
  • 40g of plain flour
  • 300ml of boiled milk
  • 180g mid fillet portion of Cone Bay barramundi
  • 30ml olive oil
  • 2 clams/ 2 pipis/ 2 vongole
  • 50ml of white wine
  • 400ml of velouté
  • A couple sprigs of lemon thyme
  • 3 pencil leeks
  • 20g lemon balm micro herbs
  • 15g Avruga

Method

1 Prepare a basic fish stock using either snapper or barramundi carcasses. Approximately 2L worth. Cook for 25 minutes on low heat, strain then set aside.

2 Make a roux using 40g of salted butter and 40g of plain flour.

3 Whisk in 300ml of boiled milk then add 500ml of fish stock. Cook out for 5 minutes then strain through a fine sieve to remove any excess flour.

4 In a hot pan sear off mid fillet portion of Cone Bay barramundi skin side down using olive oil. After 2 minutes, turn heat on low then leave to cook for a further 6 minutes.

5 In a small hot pot place the clams/pipis/vongolé and add 50ml of white wine then cover with a lid.

6 After 90 seconds, remove the lid and add 400ml of velouté, a couple sprigs of lemon thyme and season to your liking.

7 Chargrill the pencil leeks and add to the clam/velouté pot

8 Serve the clam veloute then the Barramundi immediately, garnishing with lemon balm micro herbs and avruga.

Freedom tableware and Christmas launch at Sailor’s Club

Yesterday I had a lovely time at the lunchtime launch of Freedom’s new tableware and Christmas collection at Sailor’s Club in Rose Bay.

It was great to catch up with bloggers, stylists and interior designer Darren Palmer (top right). Jason Grant styled the event beautifully.

I think those pineapples (less than $20) are going to be a sellout!

Pom pays tribute to second home Sydney with latest poster art series

Al Walsh’s first series of poster art, The Travels of Vivienne, recalled an era of advertising now long gone. The exhibition was heralded a success with press in Harper’s Bazaar, Vogue and of course, Interiors Addict.

Fast forward to 2013 and we have Sydney, Al’s second poster art series. It elegantly captures iconic suburbs, paying tribute to the city that this Pom has called home for nearly a decade. “24 January is the 9-year anniversary of my relocation from London to Sydney. I wanted to create a collection that local people could relate to, as well as paying homage to the place as a way to say ‘thank you for having me’.”

And he nailed it. “I want people to look on their wall and see the elegance, the glamour and the seduction of Sydney,” says Al, “a little reminder of what a wonderful part of the world it really is.”

You can check out the exhibition from Thursday (24 January) at The Foxhole Small Bar, corner of Kent and Erskine Streets, Sydney. Luckily for us, Al’s works are ‘cheap and cheerful’ and at only $100 unframed or $250 framed, it’s artwork for the budget-conscious.
