Foodie Friday: Easter chocolate mousse

While everyone loves an Easter bunny or a chocolate egg, sometimes it’s nice to take things up a notch. This chocolate mousse recipe is a fancy alternative to eggs over the Easter weekend!

Ingredients

300g good quality dark chocolate, roughly chopped

3 eggs, at room temperature

1⁄4 cup caster sugar

1 tbsp cocoa powder, sifted

300ml thickened cream, plus extra whipped cream to serve

Garnish: Flake, crumbled and mini Easter eggs

Method

1. In a bowl, whip cream until soft peaks form. Set aside.

2. Place the chocolate in a heatproof bowl over a pan of gently simmering water, making sure the bottom of the bowl doesn’t touch the water. Stir until melted. Remove bowl from heat and set aside to cool slightly.

3. Place eggs and sugar in a large bowl and beat with electric beaters for 5 minutes, or until mixture is pale, thick and doubled in volume. Fold in cocoa powder and cooled chocolate until combined.

4. Use a large metal spoon to carefully fold the cream into the chocolate mixture, being careful not to overwork. Spoon into six serving dishes and chill in the fridge for at least 1 hour. Remove from the fridge 15 minutes before serving.

5. Garnish with crumbled chocolate ake and mini Easter eggs.

As part of its Easter celebrations, Sydney’s Coogee Bay Hotel has created a decadent and positively Instagram-worthy cocktail available from from Thursday April 18 until Monday April 22 (Easter Monday). And for those unable to make it to the bar, we’ve got the simple and stunning chocolate-filled recipe right here for you, dear readers. Enjoy!

Indulgent easter bunny

Ingredients

  • 30ml Baileys
  • 15ml Ketel One Vodka
  • 10ml Frangelico liqueur
  • 20ml caramel syrup
  • 30ml milk
  • Chocolate bunny
  • ‘Hundreds and thousands’ and chocolate chips to serve

Method

  • Combine all ingredients with 3⁄4 cup of ice. Serve into a chocolate bunny.
  • Garnish with ‘hundreds and thousands’ and chocolate chips.

Foodie Friday: Peanut buttercream frosted cupcakes

Easter is almost here and to celebrate, Callebaut Chocolatier and founder of Josophan’s Fine Chocolates, Jodie Van Der Velden, has put together a deliciously decadent Easter recipe to satisfy your chocolate cravings. Combining two of life’s greatest pleasures, chocolate and peanut butter, her delicious peanut buttercream frosted cupcakes with bunny ears are sure to be a hit with the kids (and big kids) this long weekend.

Makes 12 large – 18 regular

Ingredients

Cake
300g Callebaut Dark Couverture Fairtrade Callets 54.5% chocolate
250g unsalted butter, chopped
300g caster sugar
6 large free range eggs, room temperature
100g plain flour, sieved

Frosting
375g unsalted butter
375g smooth peanut butter
2 tsp vanilla extract
500g pure icing sugar, sieved
½ tsp sea salt flakes

Method

Cake
Combine chocolate and butter in large microwave safe bowl, and melt on high heat, stirring every minute until melted (around 3 mins) (or melt in bowl over saucepan of simmering water, stirring).

Whisk into the completely melted chocolate butter mix: add sugar til combined. Add lightly beaten eggs til combined. Fold in flour.

Portion cake mix into greased or patty cake paper lined cupcake tin. Bake at 170 degree C, until cooked (skewer comes out with some sticky crumbs on it when poked into centre, but is not liquid). This might take around 1/2 hour or more or less, depending on your oven.

Let cool in tin.

Peanut buttercream frosting

Beat very softened (but not melted) butter briefly, til creamy. Add peanut butter and beat until combined and smooth.

Add icing sugar 1⁄2 cup at a time, and beat well between each addition, to avoid graininess. Add sea salt flakes.

Pipe using start nozzle on top of cooled cupcakes.

Enjoy at room temperature, but keep in sealed airtight container in refrigerator.

Bunny ears
Cut shaped ears from acetate (overhead projector plastic sheets or similar) Thinly spread tempered chocolate on acetate using pallet knife.

Shape if desired, by placing ‘ear’ in slightly curved surface to set (like a bowl) and or curling over top of one ear before set and using sticky take to hold down folded section until it is holding its own shape.

NOTE: Add an extra flavour note to cupcakes by scooping a melon ball size section from cupcake before frosting, and fill with raspberry jam, or salted caramel! Yum!

Foodie Friday: Brunch Lorraine

Easter’s approaching, which means a gloriously long weekend to look forward to! Why not take your cue from Williams-Sonoma and gather friends over a leisurely Easter brunch? Organise an egg hunt for the kids and let the adults catch up over a simple, relaxed feast. This “brunch Lorraine” is inspired by the classic flavours of a quiche Lorraine, but in an easy, rustic, free-form casserole, perfect for entertaining a crowd.

You can easily prepare this dish the night before (in fact, it’s preferable, so that the bread has time to soak), cover and refrigerate it, and then simply pop it in the oven the next morning just before your guests arrive. By preparing it in this vintage-inspired lidded casserole dish in a vibrant festive shade, it’ll be safe to go straight from fridge to oven to table, perfectly presented and warm, crisp and meltingly delicious.

Serves 12

Ingredients

  • 2 Tbsp olive oil
  • 1 onion, sliced
  • Sea salt, to taste, plus 1 tsp
  • Freshly ground pepper, to taste
  • 500 g baby spinach or coarsely chopped English spinach
  • 750 g loaf batard or ciabatta, crusts removed, bread cut into 2.5cm squares and toasted until dry (about 9 cups)
  • 250 g ham, diced
  • 185 g Gruyère, grated
  • 10 eggs
  • 2½ cups (625 ml) pouring cream

Method

In a large sauté pan over medium heat, warm 1 Tbsp of the olive oil. Add the onion, season with salt and pepper and cook, stirring occasionally, until caramelised, about 15 minutes. Transfer to a bowl.

In the same pan over medium heat, warm ½ Tbsp of the olive oil. Add half of the spinach, season with salt and pepper and cook, stirring, until wilted, 2 to 3 minutes. Transfer to a colander. Repeat with the remaining ½ Tbsp olive oil and spinach. Using a rubber spatula, press out the excess moisture.

In a large bowl, toss together the bread, the caramelised onion, spinach, ham and cheese. Transfer to a 4-litre baking dish. In a bowl, beat together the eggs, cream, the 1 tsp salt and pepper, to taste. Pour onto the bread mixture. Cover with plastic wrap and refrigerate for at least 2 hours or up to 16 hours to soak.

Preheat an oven to 180°C.

Remove the plastic wrap from the baking dish and cover with a lid or foil. Bake for 20 minutes. Uncover and continue baking until the top is browned and the casserole is cooked through, 40 to 50 minutes more. Serve warm.

West Elm, Pottery Barn and Williams-Sonoma launch their Autumn-Easter collections

Last week, I visited the West Elm, Pottery Barn, Pottery Barn Kids and Williams-Sonoma stores in Bondi to preview their impressive Autumn-Easter Collections.

I haven’t done much for Easter since I was a young child, when egg hunts and chocolate food comas were the activities of the day. Yet after seeing these Easter collections, I’m pretty keen for an Easter tea party (adults can do them too, right?) and if you have a child with a birthday coming up, please make this their party theme!

 

The collections aren’t just full of Easter goodies; West Elm in particular has some beautiful Autumn pieces ready to brighten up your home in preparation for the impending winter season. Timber furniture, chunky knit throws, wool rugs and plush cushions are very much a theme and one must not forget my all time favourite West Elm piece, the rose gold cutlery set. So good.

Happy Easter, readers!

I hope you’re all having a lovely, relaxing, Easter weekend with your family and friends. You just can’t beat a FOUR-day weekend, can you?!

Today I’m off to the in-laws for some family fun and plenty of food, no doubt. On our mini road trip to the Blue Mountains on Good Friday, I picked up these fair trade, handmade Belgian chocolate Easter treats for everyone. Now I’m not about to turn into some holier than thou chocolate snob, but it does feel nice to buy something I know has been made ethically and doesn’t come with a ridiculous amount of plastic and cardboard wrapping (but the kids love it, right?!).
